Easy Toll House Pie

With Thanksgiving right around the corner I thought it would be a great time to post a recipe for a delicious pie. Now I know a lot of people are not fans of pie but who doesn't like a great chocolate chip cookie? This is practically like eating a giant cookie, and it's really easy to make, so it's worth attempting to win over the pie haters. 

These are the ingredients you need for the pie:

1 unbaked 9 inch pie shell (I used the store bought crust. It's just as good as homemade... here I used Wegmans, but the pillsbury works just as well)
2 large eggs
1/2 cup all purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup melted butter
1 cup semi sweet chocolate chips
1 cup chopped nuts (optional) 



First step... Crack the eggs and beat them in a large mixing bowl until they are foamy...



Add the flour...


Sugar...


And Brown Sugar...


Mix well until blended completely...


Next step, melt the butter. I didn't think you needed pictures but here they are anyway...



Once melted, pour into the batter and mix until smooth. 




Add the chocolate chips. I used about 3/4 a bag. It calls for half, but I like my pie very chocolaty so use your discretion as far as this step goes. 


Mix well until completely blended and looks like cookie dough... 


Next lie the crust over the pie dish, and use a fork to poke holes in the bottom


I used a smaller pie dish, so with the extra crust, I folded it over till the ends just meed the edge of the dish.


Then pour the batter into the pie crust and even it out ...


Use your fingers to create a serrated look for the crust (see youtube video if confused) and put in the oven at 325 degrees for 55 to 60 minutes...


Not the greatest picture, but it sure will have the greatest taste! When sliced, the outcome is a rich chocolaty mouthful of pie that will sure be the hit of the gathering. Enjoy!

The most amazing chili ever!


I thought It would be time for my very first guest entry. My Friend's father sent this recipe to him a year or so ago and it was the most amazing Chili... So I thought it was time to pass this along... Thank you Joe Speranza!


What you’ll need

2 to 3 lb roasting meat (here I’ve used 3lb of boneless pork, hidden behind the beans)
3 onions
1 can crushed tomatoes
4 – 5 green peppers
Fresh tomatoes
Chili seasoning (shown here is Ortega – not my favorite, but all the A&P had)
Baking pan


Place the meat in the roasting pan.  Here I’ve sliced the roast, but if you use boneless steaks you can place them in whole



Chop two of the onions up and spread over the meat


Pour the entire can of crushed tomatoes over the onion and meat


Cover with foil, loosely


Place in oven at 350


Note the time



Take out of the over approx 2 1/2 hours later


Part one finished, next we'll pull the pork and add the rest of the ingredients 


Use a fork to pull the meat apart. As long as you kept it covered in the over there should be a fair amount of liquid


Put the meat, all the beans, and the seasoning into the pot.  Rinse the cans with a little water and add that liquid to the pot.  Stir and heat over low heat.


While the pot is heating, cut up the peppers, onions and tomatoes




Bring the meat and beans to a low simmer, and let simmer for at least 15 minutes.  Stir it every once in a while, make sure to scrape the bottom – it may stick.


Add the vegetables, stir and let them heat through.



Done!  I tried not to overcook the vegetables, though you might want to let everything cook down (maybe an hour).  I wanted to try it with the vegetables still recognizable.

Easy Pumpkin Crunch Cake

Its been a while since I posted something but being that it's a cold and rainy day I found it fitting that I post a recipe about a delicious warm fall treat that will wow anyone who eats it. Best news... It's really easy to make. I cannot take complete credit for this recipe, my friend Maria made it for Canadian Thanksgiving a few weeks ago and I have not been able to stop thinking about it since... So here it is for you!

First of all here are the ingredients you need for this cake:

1 Package yellow cake mix
1 can (15oz) solid packed pumpkin
1 can (12oz) evaporated milk
3 eggs
1 3/4 cups sugar
1 1/2 tsp cinnamon
1 cup chopped pecans
1 cup melted butter (salted)




I sent my husband out to do the shopping and he came home with the 30 oz pumpkin, so I just used half and put the rest aside for another day. 

The first step to making this cake is greasing a 9x13 pan. I used a regular cooking spray but it doesn't really matter what you use



Then in a fairly large bowl combine the Pumpkin...


Evaporated Milk...



Eggs...



Sugar...



And Cinnamon...



Combine all of these ingredients with a wisk until they have a pumpkin pie look and consistency to them...



Then Pour what you have in the bowl into the greased pan...





When the "batter" is in the pan, open the cake mix and sprinkle the entire contents over the top as seen here ...



I had to use my hands to break up a couple of the big chunks and make the mix even over the top so don't be afraid to do that.

When this step is done, take your pecans and sprinkle them over the top of the cake mix...



When this step is complete, all you have left to do is pour the melted butter over the top...





Set your oven to 350 and bake for 45-55 Mins (Depending on how fast your oven cooks) wait till the top of the cake is Golden Brown, and Voila!




I couldn't pick my favorite picture so I put all 3 on here, It looks amazing and more importantly it will taste fantastic. This is a great thing to bring somewhere if you want people to think you spent hours baking. It's simple and the end result is simply amazing!  Enjoy!
